DESCRIPTION
Txomin Etxaniz is one of the best-known producers of Txakoli, the white wine of the Basque coast in northern Spain. Its vineyards are around Getaria, on hills facing the Bay of Biscay. The wine is mostly Hondarrabi Zuri, with a little Hondarrabi Beltza.
It is light, about 11% alcohol, with a slight natural spritz, high acidity and notes of green apple, lemon and sea salt. Few whites are better on a hot afternoon.
Serve it cold, 45-48F. In the Basque Country it is poured from a height into a wide tumbler to wake up the bubbles. It is ideal with anchovies, grilled sardines, shrimp, oysters, pintxos and salty Spanish cheeses.
