• Blanco tequila produced in Degollado, Jalisco, by Productores de Agave y Derivados de Degollado (NOM 1514) • 100% Azul aka Blue Weber (Agave tequilana) matured 6–8 years • Cooked 20 hours in a high-pressure autoclave • Crushed using a roller mill • Open fermented in stainless steel tanks for 72–80 hours using deep well water with proprietary yeast and breadmaking yeast • Double distilled in stainless steel pot stills • Citrus zest, sweet potato, cinnamon, nutmeg, black pepper, hazelnut, cherry cola, jasmine • Additive free • 42% ABV Highland agave is cooked in an autoclave for sixteen hours, then rested and cooled for four hours, reducing tannins and allowing the sugars to caramelize, before undergoing another four hours of cooking. An intentionally slow first-run distillation is followed with a painstaking second pass, with temperature control adjusted manually every 120 minutes.
