DESCRIPTION
Westborn's Perpetual Reserve is a sparkling wine made the slow way. Half of it comes from the 2020 harvest and half from a perpetual reserve, a solera of older wines the winery has been building for seven years. It's certified sustainable.
The blend is 50% Chardonnay, 42% Pinot Noir and 8% Meunier, the three Champagne grapes. It spent 37 months on the lees and has a low dosage of 4 grams per liter, so it's dry. Expect citrus and green apple, toast and brioche from the long aging, and a fine, steady mousse.
Serve it cold, around 45F, in a tulip or white wine glass. Good with oysters, sushi, fried chicken or salty snacks. A thoughtful choice for anyone who likes grower Champagne.
