• 100% Semillon • Sourced from a 1HA single vineyard, with bush vines that are 65+ years old • Ancestral farming by hand and horse • Decomposed granite soils and sub-soils • Hand harvested • Fermented with indigenous yeast in amphora with skins, with some whole bunch • Seeds were removed when they floated to the surface and skins remained in the juice for 8 months • Aged in amphora, flex eggs, and old barrels for one year
