Santo Tomás is one of the oldest wineries in Baja California, Mexico, the region most people mean when they talk about Mexican wine. Barbera is an Italian grape from Piedmont, and it does well in Baja's warm, dry climate.
Barbera is known for bright acidity and soft tannins. Expect red cherry, plum and a little spice, with a juicy, refreshing finish. It's medium-bodied and easy to drink young, so there's no need to cellar it.
Serve it slightly cool, around 58-60F. It's great with pizza, tomato-based pasta, tacos al pastor, grilled sausages or carne asada. A fun bottle for anyone curious about Mexican wine, and a good conversation starter at the table.
