Sancerre sits at the eastern end of the Loire, on chalk, flint and clay above the river. The Sauvignon Blanc grown here is the benchmark for the grape: dry, taut and mineral, with citrus and orchard fruit rather than the tropical weight of warmer regions, and a flinty note the local silex soils are known for. Serve it cold, with goat's cheese or shellfish.
