Louis XIII is the top of the Rémy Martin range and one of the most famous cognacs in the world. It's a blend of up to 1,200 eaux-de-vie, all from Grande Champagne, some of them a century old. Each generation of cellar masters lays down spirit they'll never see bottled.
Expect a lot of layers. Dried fruit and honey, cigar box, leather and sandalwood, with floral notes and spice that keep shifting in the glass. It's smooth and very long; people talk about the finish lasting minutes, and that isn't much of an exaggeration.
Pour a small measure into a tulip glass at room temperature and give it time. No ice, no mixer. It comes in its own crystal decanter, which is part of the reason it's bought for the biggest moments: a milestone birthday, a business deal, a retirement.
