Pierre Chavin is a French wine house in the Languedoc, in the south of France, founded in 2010 by Mathilde Boulachin and Fabien Gross. It specializes in alcohol-free wine, and Pierre Zero is its main label. This sparkling Chardonnay starts as real wine and then has its alcohol removed, leaving it under 0.5%.
Expect fine bubbles, fresh apple and citrus and a soft, slightly sweet finish. It is lighter than Champagne, and it is one of the better alcohol-free sparklers for a toast when someone at the table isn't drinking.
Serve it very cold, around 40-45F, in a flute or white wine glass. It works as an aperitif, with brunch, salads, light seafood or fruit desserts, and as a base for alcohol-free spritzes.
