• Mezcal produced in Santiago Matatlán, Oaxaca • Maestra Mezcalera Margarita Blas & Carlos Mendez Blas • Distilled from 100% Cirial (Agave karwinskii) • Cooked in conical earthen ovens • Milled using a stone tahona • Fermented in wooden vats called tinas • Distilled twice using copper pot stills • A contemplative journey from bold fruit to dry heat with a deep earthy finish • 47% ABV Physically imposing and rare to find in cultivation around Oaxaca, Cirial is one of the largest of the Agave karwinskii subspecies. Carlos and Margarita produce a particularly balanced and subtly nuanced example, walking a tightrope between delicate fruits, earthy smoke, dried herbs, and tea leaves.
