DESCRIPTION
The Riesling was fermented entirely in wood, where it lay on the fine lees for almost a year. Due to the sheltered location, this wine has always been one of the more powerful wines in the portfolio. This is particularly evident in the 2022 vintage, as Stephan Attmann fermented the wine down to two grams less residual sugar than last year, i.e. 4.6 grams of residual sugar with 7.4 grams of acidity.
This makes the wine appear much tighter than the previous vintage and even a little more citrusy and tighter than the Paradise Garden of 2022. The Mouse Cave smells of lemons, limes, a little pineapple, green apples and pears as well as verbena and fresh herbs. On the palate, the acidity and minerality are electrifying and fresh, while the aging on the fine yeast in wood adds sensual and silky features.
