Matar is a Cabernet Sauvignon from Israel's Galilee, the cooler, higher-altitude north of the country where many of Israel's best reds are grown.
It's 100% Cabernet Sauvignon, aged for 18 months in oak barrels. That gives it a full body and a round finish, with rich black fruit and a distinctive note of pecan from the oak. It's a polished, generous red rather than a lean one.
Open it about 30 minutes before dinner and serve around 62-65F in a large glass. It goes well with grilled steak, roast lamb, brisket or a hearty stew. A good choice for a holiday table or for anyone curious about how good Israeli Cabernet has become.
