Lustau is a sherry house in Jerez de la Frontera, in Andalucía, Spain. Los Arcos belongs to its family solera range, which Lustau now calls Solera Familiar, and it is matured at the Bodega Emperatriz Eugenia in Jerez.
It is made from Palomino grapes and aged about eight years in the solera. That time is split roughly evenly: first under a layer of flor yeast, as a fino, and then exposed to oxygen once the flor fades. This gives it both the freshness of a fino and the depth of an aged wine. It is amber in color with a clear hazelnut nose. The palate is light, soft and round, dry, with a rich nutty flavor and a long finish. Dry, nutty and very easy to like.
Serve lightly chilled, at 55 to 57°F, in a white wine glass or a copita. Lustau suggests artichokes and green asparagus, which are hard to match with most wines. It is also good with tapas, aged cheeses, nuts and olives, soups, mushroom risotto and even spiced Indian dishes. Keep an open bottle in the fridge.
