Crafted at JUSTIN Winery's Paso Robles facility, Savant is a sparkling wine built on 100% estate-grown Chardonnay and Pinot Noir selected for high natural acidity. After whole-cluster pressing, a cool primary fermentation in stainless steel preserves pure citrus and green apple fruit characters, while a secondary Méthode Traditionnelle bottle fermentation yields delicate bead and brioche complexity. A minimum of 18 months' tirage aging on lees deepens texture, imparting hints of toasted almond and pastry dough. The result is an elegant sparkler that balances crisp lemon zest, pear blossom and subtle yeast-driven richness-an homage to traditional Champagne technique in the heart of California.
