DESCRIPTION
In Paso Robles's cool Estrella and Adelaida Districts, Sauvignon Blanc grapes are night-harvested to lock in acidity. Grapes go through whole-cluster pressing; juice ferments at 13 °C in stainless steel with select aromatic yeast strains. A short period of lees aging (4 weeks) builds body without detracting from bright grapefruit and passionfruit notes. The wine is filtered lightly and bottled early to capture peak freshness.
