DESCRIPTION
Illahe began this project in 2011 to make wine with no electricity and no modern machinery. Fruit is picked by hand and brought to the winery by horse, destemmed by hand into wooden fermenters, fermented on native yeasts, pressed in a wooden basket press and moved to barrel by bicycle pump. No dry ice, no commercial yeast, no filters. Red cherry, wild strawberry and rose petal, silky and energetic, with fine tannins.
