Cherry Heering is the original Danish cherry liqueur, made to a recipe that dates back to 1818. It was created by Peter Frederik Suhm Heering, a Danish merchant, and has been a supplier to the Royal Danish Court. The brand is now part of the Dutch De Kuyper group.
It is made from Danish cherries harvested in August, using all natural ingredients, and bottled at 24% alcohol. In the glass it is deep red, sweet and thick, with intense aromas of preserved cherries plus almond and herbal notes. The flavor is rich, ripe cherry with a little spice. Sweet, but with enough depth to stand up in a cocktail.
Bartenders know it as the cherry in two classics: the Singapore Sling and the Blood and Sand. On its own, serve it over ice in a small rocks glass after dinner. It is also very good poured over vanilla ice cream, alongside dark chocolate, or with a cheese board of aged Gouda and blue cheese. A splash in baking or in a pan sauce for duck works well too.
