• 100% Gamay Noir • Lahoma Vineyard (Seneca Lake AVA) • Cold soaked for 3 days in stainless tank • Fermented in 650 gallon French oak tank • Three to four punchdowns per day during fermentation • Pressed off the skins after 6 weeks of daily punchdowns • Wine pressed off into old-fashioned screw press then returned to original oak tank • Aged on the lees for 8 months • 12.8% abv
