Champagne often includes “liquide de dosage;” the sweet original wine the Champagne is sourced from, which is added when the Champagne is disgorged during the secondary fermentation process. This Zero Dosage Champagne is made without that addition. The result is a very dry, sharp yet elegant and classy Champagne, expressing the essence of the Pinot Noir grape variety. Bright straw in color, with baked apple on the nose, fresh Meyer lemon, hints of toasted bread, as well as a hint of clove.
Medium- bodied, with vibrant, tight mousse, focused medium bubbles, a harmonious texture with notes of apple, pear, roasted hazelnuts, crushed rocks, lime zest with high acidity and a touch of crème fraîche lingering on the long and racy finish. This is one remarkable Champagne.
