• Small batch dry gin produced by Supergay Spirits in Yonkers, New York • Base spirit made from 100% New York corn distilled 4 times in a continuous column still • Botanicals include wild sugar kelp, juniper, chamomile flower, wild foraged elderflower, finger limes, oranges, limes, orris root, coriander, pink peppercorn, and Tasmanian pepperberry • Wild sugar kelp is foraged by Violet Cove Oysters in Moriches Bay, East Moriches, New York • Botanicals are incorporated on a fifth distillation in a purpose-built column still; the majority of the botanicals are macerated prior to distillation, but the more delicate botanicals (chamomile flower, elderflower, finger limes) are added later in the run • Proofed with filtered water from the Catskill Mountains • A heady perfume of chamomile and elderflower evolves into orange oil and savory lime skin framed by a kiss of cedar and the meaty, saline funk of fresh oyster.
