Ferrari was founded in Trento in 1902 by Giulio Ferrari, who studied winemaking in France. Today the Lunelli family runs it, and its mountain vineyards in Trentino give wines with high acidity and freshness.
This Brut Rosé is made by the metodo classico, the same second fermentation in bottle used in Champagne. It is 60% Pinot Noir and 40% Chardonnay, hand harvested in September and gently pressed, with a short skin contact for color. It then rests about 20 months on the lees. It is 12.5% alcohol.
Pale salmon pink, with hawthorn flowers, red currant and wild strawberry on the nose. The palate is dry, clean and elegant, with bright acidity and a delicate finish of sweet almond.
Serve it well chilled, around 43 to 46°F, in a flute or tulip glass. It makes a lovely aperitif and pairs with seafood: shrimp cocktail, salmon tartare, sushi or a light risotto.
