Escubac, Sweetdram

• Botanical spirit produced by Sweetdram in Edinburgh, Scotland • Botanicals include caraway, cardamom, nutmeg, bitter orange, orange, lemon, clove, orris, coriander, cubeb, and cinnamon • 14 botanicals macerated in neutral wheat spirit for 72 hours before distillation • Distilled in a custom copper pot still • Lightly sweetened by a second 72-hour maceration with raisins and vanilla • Naturally colored with saffron • Tropical, Christmas-spice aromas on the nose deliver a mix of nutmeg, candied orange peel, saffron, and star anise. The palate is juicy and herbaceous with raisin, angelica root, clove, and cardamom and a long, spicy finish of seeded rye bread, cumin, and cinnamon. • 34% ABV Evocative of gin, aquavit, and herbal liqueurs, Escubac is inspired by an old English Tudor recipe called Royal Usquebaugh which was later adopted by the French, who renamed it Escubac. Rendered obsolete for nearly a century, it was revived by Sweetdram in 2015 and remains the only expression of this historical aromatic spirit today.
