Domaine Laroche is one of the leading houses in Chablis, and Les Vaudevey is one of its Premier Cru vineyards. Chablis is Chardonnay, but it tastes nothing like the oaky California style.
This is very pure and chiseled, reflecting the fresh, rocky soils it grows in. Expect lemon, green apple and white flowers, with a lively, mineral backbone and a clean, saline finish. It's precise rather than rich.
Serve it chilled but not icy, around 50F, in a white wine glass. Oysters are the classic Chablis pairing, and it's also excellent with grilled fish, sushi, chicken in cream sauce or Comté. A good pick for people who like their whites crisp and dry.
