DESCRIPTION
Savennières is a small appellation on the Loire, near Angers, known for dry Chenin Blanc with real intensity. Domaine du Closel is one of its historic estates, and Le Clos du Papillon is its best-known vineyard, named for its butterfly shape.
It's dry, focused Chenin. Expect quince, yellow apple and citrus, with honey, chamomile and a stony, mineral edge. The acidity is firm, and it gains richness and texture with time in the glass or the cellar.
Serve it cool, around 52-55F, in a white wine glass, and don't serve it too cold. It's lovely with roast chicken, pork, scallops or creamy cheeses. A great white for people who think they don't like Chenin.
