• Destilado de agave produced in San Miguel Atlapulco, Puebla, Mexico • Maestros Mezcaleros Balbino & Sergio Salas • 100% Espadilla (Agave angustifolia) harvested after one year capón • Cooked in a conical earthen oven • Milled by hand using wooden mallet and canoa in addition to a small mechanical grinder • Fermented with ambient yeast and spring water in stainless steel tanks • Distilled twice using traditional copper pot stills • Tasting notes include mineral and salt, delicate flowers, kiwi, dragon fruit, white chocolate, anise, and citrus peel • 46.6% ABV (ABV may vary batch to batch) A smaller subspecies of Agave angustifolia common to the state of Puebla, this example from the Salas family is particularly beguiling. Floral and fruity, full of anise and cacao, yet grounded by earthy notes of clay and soft minerality. Sure to redefine your understanding of the species.
