• Single barrel destilado de agave produced by Caballito Cerrero in Amatitán, Jalisco • Chosen by and bottled exclusively for Skurnik Wines & Spirits • Maestro Tequilero Claudio Jimenez Hernandez • 100% Azul (Agave tequilana) • Steam cooked in a 150-year-old brick oven and rested 24–36 hours • Milled using a double-pass roller mill at 11 degrees brix • Open fermented for 7 days in stainless steel • Distilled twice: first pass in a small stainless steel pot still, second pass on a larger copper pot • Rested 29 months in worn and heavily extracted decades-old American oak barrels • Distilled in January 2023; 222 bottles produced • Powerful and festive aromatics of toasted corn, frijoles, caramel apple, sweet potato, caraway, toasted fennel seed, and memories of fresh lumber and sherry-brined roast chicken; the palate dries out an earthy, piney attack followed by sweeter confectionary notes of toffee, green herbs, a hint of cinnamon, and Jordan almonds • Additive free • 51.7% ABV The second of a small series of barrels hand selected by Skurnik Mexico Portfolio Manager Justin Lane Briggs at the historic Santa Rita Fabrica, this special bottling offered instantly compelling aromas the second Javier Jimenez opened it up. At 17 months, it was big and brash and extremely exciting, but the Caballito and Skurnik teams agreed that the finest promise it held lay in a further push on the aging, so the barrel was resealed and continued to lay in wait... Finally pulled at 29 months, this release has the distinction of being the first two-year-old Añejo release from Caballito Cerrero in the US market (not to be confused with 2024’s Extra Añejo, exclusive to Texas)!
