Grapes, carefully chosen, are handpicked and gently pressed. The free-run juice undergoes fermentation after 5 days of cold static settling in stainless steel tanks under controlled temperature. Regular lees stirring extracts maximum aroma, enhancing structure and natural stability. After 9 months on lees, the wine is bottled.
