Normandin-Mercier is a family cognac house, and this XO is a 30-year-old Grande Champagne, from the cru known for the longest-lived, most elegant eaux-de-vie.
Thirty years is old for cognac, and you can taste it. On the nose there's dried fruit, almonds and hazelnuts, candied orange peel, cinnamon, vanilla and honey. The palate is full and fruity: dark chocolate, brioche, plums and dates, with tobacco, oak spice and toffee lingering on a long finish.
Pour it neat into a tulip glass at room temperature and let it sit for a few minutes before you start. It needs nothing else, though dark chocolate or a cigar won't hurt. For a serious cognac drinker, this is a step up from the big-house XOs and a memorable gift.
