• 100% Chenin Blanc • Sourced from their estate vineyard in the western edge of the Upper Galilee at 800m ASL • Soils are composed of a gravelly flint (silex) clay • Hand harvested then gently whole-cluster pressed • Slow (6 months) natural fermentation in oak • Spontaneous malo-lactic fermentation • Aged 9 months on lees in neutral French oak barrels and Austrian oak oval
