DESCRIPTION
Pavillon Rouge is the second wine of Château Margaux, one of the four original First Growths of the 1855 classification. It comes from the same vineyards and the same cellar team as the grand vin, made from younger vines and lots that don't go into the first wine.
Margaux is known for perfume and finesse rather than raw power, and Pavillon Rouge follows that lead. Expect a Cabernet Sauvignon-led red with dark currant, violet and cedar. With more than fifteen years in bottle, a 2009 should be into its mature, more savory phase.
Stand the bottle up a day ahead, decant it off any sediment, and serve around 62-64F. Pour it with roast lamb, beef or mushrooms. It is a good way to drink mature Margaux without First Growth prices.
