• 100% Chardonnay • Sourced from a parcel planted on the Helderberg Mountain, 400 meters and has a maritime influence • Deep loam-rich soils • Hand harvested • Grapes were pressed whole bunch and racked to barrel for a cold fermentation with indigenous yeast • Primary and malolactic fermentation processes to complete, which lasted for just over sixty days. • Aged for 12 months in 225L tight grain French oak barrels, 30% new, followed by a further11 months in 2nd and 3rd fill barriques
