Uni Terre is a Champagne from Oudiette x Filles, a small grower name rather than one of the big Champagne houses.
Grower Champagnes are made by the families who farm the grapes, and they tend to show more of their village and vineyards than big-brand blends. Expect the classic Champagne profile of citrus, green apple and brioche, with fine bubbles and fresh acidity. It's a good way to try something different from the familiar labels.
Serve it cold, around 45-48F, in a tulip glass or a white wine glass rather than a narrow flute. It's lovely as an aperitif and with oysters, sushi, fried snacks or soft cheeses. A good pick for someone who already knows the big names and wants to explore.
