This Chablis from Domaine Boudin is 100% Chardonnay from vines over 30 years old, near the village of La Chapelle-Vaupelteigne, just west of the Premier Cru Fourchaume.
The vines grow on Kimmeridgian marl, the fossil-rich limestone soil that gives Chablis its famous mineral edge. The wine is fermented with indigenous yeast and aged in stainless steel, with no oak, so the fruit and minerality speak clearly. Expect lemon, green apple and white flowers, with crisp acidity and a chalky, saline finish.
Serve it chilled, around 48-50F, in a white wine glass. Chablis and oysters is one of the great pairings, and it's also very good with shellfish, grilled fish, sushi or goat cheese. Proper village Chablis at a very fair price.
