DESCRIPTION
Benanti is one of the families that put Etna back on the wine map. Contrada Cavaliere is a single vineyard on the south-western slope of the volcano, in Santa Maria di Licodia, at about 800 meters. The wine is 100% Carricante, Etna's native white grape, from vines around 50 years old.
High altitude and older vines mean small yields and a lot of concentration. The wine spends about 12 months in stainless steel on its fine lees, then six months in bottle. Expect orange blossom and ripe apple, then a dry, mineral palate with lively acidity and a finish of anise and almond. It is a white with real tension, and it will age.
Serve it chilled but not icy, around 50-54F, in a white wine glass. Pair it with grilled swordfish, shellfish pasta, octopus or fresh ricotta.
