Crafted in small lots from 100% estate-grown Chardonnay in Monterey County, this sparkling Blanc de Blancs undergoes a traditional méthode traditionnelle. Hand-harvested grapes are pressed whole-cluster to preserve delicate aromatics and fermented cool in stainless steel. After primary fermentation, the wine is bottled with a tirage liqueur and aged on its lees for 12 months, developing fine mousse and brioche notes. A precise disgorgement removes the sediment, after which a light dosage of cane sugar is added to achieve a balanced Brut style. The final wine is crisp and mineral-driven, showcasing green apple, lemon zest and a subtle toasty complexity.
