Bailoni is a family distillery in Krems-Stein, on the Danube in Austria's Wachau valley, founded in 1872. The Wachau is famous for its apricots, which blossom in April and are picked at the end of July, and apricots are what Bailoni is known for.
This is the Original Gold Apricot Schnaps at 80 proof. It is a fruit spirit, stronger and less sweet than an apricot liqueur. Expect the smell of ripe apricot and stone fruit, warmth on the palate and a clean, fruity finish.
Austrians pour it as a digestif after a big meal. Serve it at room temperature or lightly chilled, around 55-60F, in a small tulip glass so you get the fruit on the nose. It is good after apricot dumplings, Sachertorte or a cheese plate, and a splash livens up a fruit salad.
