The half bottle of Veuve Clicquot's Yellow Label, the non-vintage Brut the house has built its name on since 1772.
Pinot Noir leads the blend, which is where the weight and the baked-apple character come from. Chardonnay adds lift, a little Meunier rounds it off, and reserve wines held back from earlier harvests go into every batch. That last part is how the style stays recognizable year after year. Dry, but not austere.
The 375ml is the practical size for two people, or for a toast where a full bottle would be flat before anyone finished it. Serve it cold, around 45F, in a tulip glass rather than a flute if you have one. Good with oysters, fried chicken, salted almonds, or on its own before dinner.
