All Xinomavro, the great red grape of northern Greece, made sparkling at Amyndeon. Most of the must gets twelve to forty-eight hours on skins, then a second fermentation in tank and three months on lees with batonnage. Bright cherry colour with a lively mousse. Wild strawberry, sour cherry and rose petal with crushed herbs, fresh acidity and a saline edge.
