Medium lemon in color with highly expressive notes of blackcurrant and ripe stone fruit. The palate is richly textured with firm acidity and flinty minerality.Pair with pork roasts, as well as seafood and poultry, especially in cream sauces.Color - Medium lemonBouquet - Highly expressive with notes of blackcurrant and ripe stone fruitTaste - The palate is richly textured with firm acidity and flinty mineralityPair with pork roasts, as well as seafood and poultry, especially in cream sauces. The carefully harvested fruit from the S1block was crushed, de-stemmed, chilled and gently pressed. The juice was cold settled for 72 hours, after which the clear juice was racked off. A long, cool fermentation in stainless steel followed to capture and enhance the distinct flavors of the S1 block. The wine spent three months on the lees, with regular stirring to help build texture and structure. The wine was then stabilized and filtered before bottled.100% Sauvignon Blanc
