IT'S ALL IN THE DETAILS
The Pommard has a dark red color with intense aromas of blackcurrant, musk and game. Well-marked acidity and a mellowness that only appears after a minimum of maturity. Tannic and robust wine.
The wine is put in French oak barrels after a light settling. The malolactic fermentation can then begin thanks to the bacteria naturally present in the juice. Aging lasts 14 months on fine lees. We follow the lunar calendar for bottling without fining or filtration: it takes place one-day "fruit".
