Founded in 1931 by Robert Dauvissat, the estate has been passed down from father to son for three generations. Robert's son, René, is the one who made the reputation of the Domaine. Vincent started working with his father, René, in 1976 and today runs the estate. Vincent Dauvissat operates around 12 hectares of meticulously maintained vines, using \u003cstrong data-mce-fragment=\"1\"\u003esustainable, organic and biodynamic methods\u003c\/strong\u003e, \u003cstrong data-mce-fragment=\"1\"\u003ewithout certification\u003c\/strong\u003e. These vines (Vaillons, Séchets, Fôrets among the Premiers Crus and Preuses and Les Clos among the Grands Crus) are located on hillsides underpinned by Jurassic limestone. Vincent Dauvissat also produces a Villages Chablis and a Petit Chablis. \u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cstrong data-mce-fragment=\"1\"\u003eChardonnay \u003c\/strong\u003egrapes are naturally grown and harvested by hand. No destemming is carried out and the \u003cstrong data-mce-fragment=\"1\"\u003emalolactic fermentation\u003c\/strong\u003e occurs spontaneously. Unconventional for Chablis, Dauvissat renounces stirring (mixing to increase contact with the lees).
