Sova were certainly blessed to acquire the Oak Knoll and Saint Helena Cabernet Sauvignon and able to combine that with some phenomenal Spring Mountain Merlot.
The 2017 Sova Cabernet Sauvignon is 90% Cabernet Sauvignon and 10% Merlot. Dark purple. Opulent aromatics including both savory and sweet characteristics. Leather initially. Ripe with aromas of plum, blackberry, violets, old cedar box, dried tobacco leaf and cracked pepper. The savory aromatics initially show but as the wine breathes, more fruit comes forward. Juicy, mouth watering with flavors of dark cherry and plum. Youthful tannins show more grip then any vintage. The finish is long – anchored by darker spices and persistent grainy tannins.
After two years of aging and almost two years in bottle this wine is just now rewarding me with the effort that went into it. One of my favorite smells I noticed while tasting this wine is “dusty sun-drenched orange grove” Very California
