Grape harvest takes place during the 1st and the 2nd weeks of October, depending on ripeness. Grapes are picked by hand, respecting their wholeness and the organoleptic peculiarities that will come out with the wine. Winemaking is carried out in respect of tradition and observing the most modern winemaking methods. Brief cryomaceration with the best grapes for about 7-10 days at a controlled temperature of about 15°C for the first 2 days and at 25-27°C for the following ones. Separated with soft pressing and allowed to alcoholically and malolactically ferment.
