This is particularly evident in the 2022 vintage, as Stephan Attmann fermented the wine down to two grams less residual sugar than last year, i.e. 4.6 grams of residual sugar with 7.4 grams of acidity. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThis makes the wine appear much tighter than the previous vintage and even a little more citrusy and tighter than the Paradise Garden of 2022. The Mouse Cave smells of lemons, limes, a little pineapple, green apples and pears as well as verbena and fresh herbs.
