Friable red limestone and marl soils on west- and south-west-facing slopes. Hand-harvested and dried on bamboo racks in specialised lofts. By late January, the grapes had lost 35% of their weight. Only the Corvina grapes were naturally attacked by noble rot. Partially destemmed, then fermented for 45 days at low temperatures in large Slavonian oak barrels and stainless steel.
