
The blend of Albarín Blanco (not to be confused with Albariño!) and 40% Albillo around 60 years of age. Grapes are hand harvested, fermented separately: Albillo in stainless steel and Albarin in used demi-muid (600L French oak barrels) with indigenous yeasts, followed by 13-14 months (two winters) before blending begins. The two grapes age together for 3 to 6 months depending on the year.
There is no fining, filtering, or added sulfur. These wines are crisp, clean, super mineral-driven and not very fruity or juicy. No oak flavors whatsoever, this is refreshing, lean, with delightful acidity.
