'Ruby Soho' is a red sparkler made from the uncommon hybrid grape Regent, a Silvaner x Müller-Thurgau x Chambourcin cross. This pét-nat tastes like red forest fruit with a cold-climate, mineral fizz. Sees a brief cold maceration, then fermentation in tank, before finishing its fermentation in bottle without any intervention.
