

J.M. Boillot Meursault Les Pellans 2018 |
Jean-Marc Boillot's village-level Meursault bottling is from the single lieu-dit of Les Pellans in 2017. He describes the vintage in Vinous.com: "Jean-Marc Boillot described his 2017 white wines as 'taut like the 2016s, but with larger quantities, except in the premier crus,' where he produced only around 40 hectoliters per hectare due to hot weather during the flowering.
He added that pHs are similar in the two vintages, at around 3.3. Boillot has long been obsessed with making focused, clean wines. He works with the same three cultured yeasts, which enable him to have problem-free fermentations. 'Wild yeasts risk aromatic deviation and lack of precision,' he explained."
