J.M. Boillot Macon-Villages 2020

This is an extremely complex and delicious example of Macon Villages. Full of orchard fruit, some barrel and a touch of round butter. Wonderful!

 The wines are obtained by manual grape harvest where the sorting is systematic and only the best of the grapes are kept: the harvested clusters are put in boxes and then transported to the winery where they are directly deposited without settling into the pneumatic presses for whites or the sorting table for reds before total destemming, respecting the integrity of the berry. The vinification remains typical Burgundian style, while still adapting for the vintage.
