Dalamara Imathia Ayehoros 2020

80% Xinomavro and 20% Merlot from Polla Nera, Vantos. The grapes are harvested early September for the Merlot and towards the end of September for the Xinomavro. The only intervention that is done is the addition of a very small amount of sulfur dioxide. No added yeasts or enzymes, no filtration, no clarification etc. Extraction for 6 to 8 days in stainless steel tanks. 

Clean and delicate aromas of cherries, wild strawberries, raspberries with hints of cinnamon and tomato paste. Light body, medium to high acidity, well-structured tannins.
