Only the first and best juice of the pressing from the best local vineyards is selected. As tradition imposes fermentation is slow and in a bottle. Gratien & Meyer makes a conscious decision not to use malolactic fermentation in the production of its champagne. Lees aging is 18 months. Gratien & Meyer ages its ‘Cremant de Loire’ for over three years, well above the legal one year ageing.
